Chunky Vegetable Sauce & Linguine

Ingredients

  • 1 packet Linguine

  • 400g lean beef or lamb mince

  • 2 tbsp extra virgin olive oil

  • 2 medium zucchinis diced

  • 1 small red capsicum diced

  • 1 medium carrots diced

  • 1cup sliced fresh mushrooms

  • 1/2 cup sliced shallots

  • 1 clove garlic, finely chopped

  • 700g cooking tomato sauce

  • 1 tbsp oregano leaves

  • 1/4 cup chopped fresh or 1 tbsp dried basil leaves

  • Salt

  • Pepper

  • Grated Parmesan cheese to garnish (optional)

Method

Step 1. Boil and drain linguine as directed on package

Step 2. In a large pan, heat the olive oil. Add the shallot and garlic, then cook until fragrant

Step 3. Add mince, breaking it up with a wooden spoon. Cook until brown

Step 4. Add the zucchini, carrots, mushrooms, capsicum, tomato cooking sauce and an extra 1/2 cup of water. Cook for 5 to 7 minutes, stirring frequently, until vegetables are tender


 
Step 5. Stir in dried oregano leaves and basil and season with salt and pepper to taste. Cook 3 to 5 minutes, stirring occasionally

Step 6. Serve sauce over linguine and garnish with parmesan (optional)
