Budget Bites: Ginger Teriyaki Beef Noodles

This is the kind of dinner that’s guaranteed to make it into your weekly rotation. Beef mince, bright greens and udon noodles are tossed through a rich, glossy teriyaki and ginger sauce that’s packed with flavour and comes together in just one pan. It’s faster (and cheaper) than ordering takeaway, with each generous serve costing around $5.00. Perfect for busy weeknights when you want something satisfying, delicious and budget-friendly without spending hours in the kitchen.

Cook time: 20 minutes

Ingredients
4 spring onions, sliced (white and green parts separated)
2 thumb-sized pieces ginger, grated
500g lean beef mince
2 heads broccoli, cut into small florets
3 small bok choy, roughly chopped
150ml teriyaki sauce
1 beef stock cube
800g udon noodles
20ml sesame oil
1 tbsp olive oil
tsp brown sugar
2 tsp soy sauce
Sesame seeds, to serve (optional)
Method
Step 1. Heat the olive oil in a large wok or frying pan over medium heat. Add the white parts of the spring onion, ginger and a pinch of salt. Cook for 2-3 minutes until softened and fragrant.
Step 2. Increase the heat to medium-high and add the beef mince. Cook for 5-6 minutes, breaking it up with a wooden spoon, until browned and cooked through.
Step 3. Stir in the broccoli, teriyaki sauce, crumbled beef stock cube and 1 cup (250ml) boiling water. Add the udon noodles, cover with a lid and cook for 1–2 minutes until the noodles soften. Remove the lid and gently separate the noodles with tongs or a spoon.
Step 4. Add the sesame oil, bok choy, brown sugar and soy sauce. Toss everything together and cook for a further 2–3 minutes, until the bok choy has wilted and the noodles are glossy and coated in the sauce.
Step 5. Divide between bowls and top with the green spring onions and a sprinkle of sesame seeds, if using.
