Speedy Chicken and Veg Soba Noodles

Need a new addition to your dinner or lunch rotation? Try this 20 min, rather delicious soba noodles recipe with tender strips of chicken, packed with veggies and a sweet and tangy sauce



Serves: 4

Ready in: 20 mins


Ingredients

  • 200g Soba Noodles

  • Olive oil

  • 400g chicken breast, sliced into strips

  • 1 bunch broccolini, chopped

  • 2 carrots, sliced finely

  • 1 red capsicum, sliced finely

  • 6 tbsp tamari

  • 2 tbsp apple cider vinegar

  • 2 tsp honey

  • 2 tsp ginger fresh, or jar

  • 2 clove garlic, crushed

  • Sesame seeds (garnishl)

  • Fresh coriander (garnish, optional)


Method

Step 1. Bring a large pot of water to a boil. Add soba noodles and cook for approx 3 mins. Drain and rinse under cold water to rinse. Mix through 1 tbsp of olive oil and set aside


Step 2. In a small bowl, mix together apple cider vinegar, tamari, ginger, garlic and honey. Set aside


Step 3. Heat a large pan. Add a splash of olive oil and chicken strips. Cook for 3 to 5 mins until cooked through and golden. Add chopped veggies and saute for an additional 3 mins until veggies are slightly tender.


Step 4. Add Soba Noodles and sauce to the pan. Toss through and saute for 2 mins until heated through


Step 5. Garnish with sesame seeds and fresh coriander
