Air-Fryer Pesto Salmon with Roasted Tomatoes & Green Beans


Quick, easy, fresh and so tasty. Perfect weeknight dinner that’s on the table in 15 minutes. Bonus: Salmon is protein-rich, packed with omega-3s + B vitamins, so it’s as nourishing as it is delicious!


Serves: 2


Ready in: 15 mins


  • Ingredients

  • 2 fresh salmon fillets (skin on)

  • 1 punnets cherry tomatoes

  • 200 g green beans, trimmed

  • 4 tbsp pesto

  • 1 tsp fresh thyme leaves

  • Olive oil

  • Juice of 1 lemon

  • Salt, to taste

Method


Step 1. Drizzle a little olive oil in your air fryer tin + spread 2 tbsp pesto on the base.


Step 2. Place salmon fillets (skin side down) on top, then spread remaining pesto.


Step 3. Season with thyme + salt.


Step 4. Scatter cherry tomatoes + green beans around the salmon.


Step 5. Squeeze over fresh lemon juice.


Step 6. Air fry at 200°C for 10 mins, salmon perfectly cooked, veggies tender.


Step 7. Serve as is, or over pasta for a simple but fancy-feeling dinner
