Budget Bites Cheeseburger Bowl

These Cheeseburger Bowls have all the classic burger flavours you love: juicy beef mince, crisp lettuce, melty cheese, pickles, tomatoes and a creamy burger-style sauce, layered into a fresh, filling bowl that comes together in just 15 minutes. High in protein, low carb, family-friendly and made for under $5 a serve, this is the kind of quick dinner that feels like takeaway without the price tag. Perfect for busy weeknights when you want something satisfying, affordable and genuinely delicious

Serves: 4
Ready in: 15 minutes
Ingredients
500g beef mince
1 head lettuce, chopped
1 cup cherry tomatoes, halved or quartered
1 cup shredded cheese of choice
4 pickles, thinly sliced or diced
Salt and pepper, to taste
Sauce
3 ½ tbsp low fat Greek yoghurt
1 tbsp Dijon mustard
1 tbsp tomato sauce
1 tsp gherkin relish or pickle juice
Optional Garnish
Sesame seeds
Method
Step 1. In a small bowl, combine all sauce ingredients and mix until smooth. Set aside
Step 2. Heat a large pan over medium-high heat. Add the beef mince, season with salt and pepper, and cook until browned and cooked through. Remove from the heat and allow to cool slightly
Step 3. Assemble the bowls using one quarter of the ingredients per serve. Layer with lettuce, beef, cheese, tomatoes and pickles. Drizzle generously with the special sauce, garnish with sesame seeds if using, and serve immediately
