Busy Proof: Fresh Lime Beef Taco Meal Prep Bowls

Fresh, punchy, and seriously satisfying, these beef taco bowls are built for easy, flavour-packed lunches. Savoury taco-spiced beef pairs with fluffy lime-infused rice, sweet corn, and a vibrant homemade salsa, finished with melty cheese and a cooling dollop of yoghurt. It’s a balanced, high-protein meal prep that actually tastes fresh days later.

Ingredients

Rice

  • ¾ cup uncooked rice (rinse well before cooking)

  • ⅛ tsp salt

  • Zest of 1 lime

  • 1 tsp olive oil (optional)

Beef

  • 500g lean beef mince

  • 2 tbsp taco seasoning

  • ⅔ cup water

  • Black pepper, to taste

Fresh Salsa

  • 1 punnet cherry tomatoes, halved

  • 1 chilli, finely chopped (adjust to taste)

  • ½ cup red onion, finely chopped

  • Juice of 1 lime

  • ⅛ tsp salt

Other

  • 1 x 420g can corn, drained and rinsed

  • ½ cup shredded mozzarella or tasty cheese

  • Fresh coriander, chopped (for garnish)

  • Plain yoghurt, for serving


Method

Step 1. Cook the rice according to packet instructions, adding the salt and lime zest to the cooking water. Once cooked, fluff with a fork, stir through a small drizzle of olive oil if using, and set aside to cool slightly.


Step 2. Heat a large pan over medium-high heat. Add the beef mince and cook for 6-8 minutes, breaking it up with a spatula, until browned and fully cooked through.


Step 3. Sprinkle the taco seasoning over the beef, add the water, and stir to combine. Reduce heat to medium and simmer for 2-3 minutes, or until the sauce thickens and coats the beef. Season with black pepper if needed, then remove from heat.


Step 4. In a bowl, combine the cherry tomatoes, chilli, red onion, lime juice, and salt. Mix well and let it sit for a few minutes so the flavours can develop.


Step 5. Divide the rice evenly between four meal prep containers. Top with the beef, followed by the corn and a generous spoonful of fresh salsa.


Step 6. Sprinkle the cheese over the warm beef so it slightly melts into the mixture.


Storage: Allow the bowls to cool completely before sealing. Store in the fridge for up to 4 days.


Serving: Reheat until steaming hot, then finish with a dollop of yoghurt and fresh coriander before serving.
