Busy Proof: Sticky Honey Sesame Chicken Bowls

These Sticky Honey Sesame Chicken Bowls are your answer to fast, feel-good lunches that don’t taste like meal prep. Juicy chicken breast is coated in a glossy, sweet and savoury sesame glaze, then served with tender greens and fluffy rice for a balanced, satisfying bowl.
It’s the kind of recipe that tastes like your favourite takeout, but is lighter, cheaper, and made with simple ingredients you probably already have. Perfect for busy weeks, these bowls hold up beautifully in the fridge, so you’ve got something genuinely delicious ready to go when life gets hectic.
Serves: 4
Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:
Honey Sesame Sauce:
¼ cup chicken stock or water
¼ cup reduced sodium soy sauce
¼ cup honey
1 tbsp sesame oil
½ tsp chilli flakes
1 tsp cornflour
Chicken Lunch Bowls:
3/4 cup rice
2 tbsp olive oil (divided)
3 cups broccoli (chopped small)
3 cups sugar peas (ends trimmed)
2 large chicken breasts (cut into 2.5-3cm cubes)
Salt & pepper
Sesame seeds (to serve)
Method
Step 1. In a small bowl or jar, whisk together all the honey sesame sauce ingredients until smooth. Set aside
Step 2. Cook the rice according to packet instructions. Once done, divide evenly between 4 containers
Step 3. Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add broccoli and snap peas and cook for 5-7 minutes, until tender and vibrant. Divide between containers
Step 4. Add the remaining 1 tablespoon olive oil to the same pan. Add the chicken, season with salt and pepper, and cook for 7-10 minutes until golden and cooked through.
Step 5. Pour in the prepared sauce and simmer for 1-2 minutes, stirring, until thickened and glossy.
Step 6. Spoon the chicken over the rice and vegetables, then drizzle over any extra sauce from the pan.
Step 7. Sprinkle with sesame seeds and allow to cool before sealing. Store in the fridge for up to 4 days. Reheat when ready to eat.
