Sambousek is a traditional Middle Eastern crispy meat pie loaded with spiced ground beef, onions and pine nuts, but can also come in a variety of flavours including savoury cheese! This is my speedy and delicious kid-friendly, modern baked version, which makes for an excellent lunch or snack on-the-go. Make a double batch and throw them in the freezer for a quick air-fryer re-heat 🙌🏽.

Makes: 16 sambousek
Ingredients
Olive Oil
1 cup onion, diced
500g beef mince
1 tbsp middle eastern 7 spice (bharat)
2 tbsp Tomato paste
1.5 cups frozen vegetables
4 sheets puff pastry
Method
Step 1. Preheat oven to 200C and line a baking tray. Defrost puff pastry until it is malleable but not entirely soft
Step 2. Add a drizzle of olive oil to a medium high heat pan and add onion, stirring until fragrant 1-2mins
Step 3. Add mince meat, tomato paste, spices and cook, breaking up the meat with a spatula until browned 4-5mins. Add frozen vegetables and mix through until defrosted 2-3mins. Set aside to cool
Step 4. Cut puff pastry into 4 equal squares, filling each square with roughly 2.5 tbsp of the filling and press the edges shut with your fingers to create a rectangle shape
Step 5. Place sambousek on your prepared tray and bake for 30 mins or until golden brown
Step 6. Allow to cool for 5-10 mins before serving warm!
Storage: refrigerate in an airtight container for up to a week or freeze for up to 6 months.
Notes
I used green onion, but 1 small white onion would be a good alternative
pampas puff pastry is my fave brand and I’ve tried quite a few
