Ready in: 35 minutes
Serves: 4
Ingredients:
1 tsp minced garlic or garlic infused olive oil
1 tbsp lime juice
600g chicken tenderloin
2 red capsicums, deseeded and sliced
2 yellow capsicums deseeded and sliced
1 green capsicum, deseeded and sliced
Small bunch of shallots thinly sliced
1/2 cup fresh coriander thinly sliced
1 packet fajita seasoning (or to make your own use 1 tbsp chilli powder, 3/4 tsp cayenne pepper, 1tsp cumin powder, 1 tsp ground black pepper and 1 tsp salt)
1 cup wholegrain couscous
1 lime
Extra virgin olive oil
Salt
Method
Step 1. In a large bowl, add the chicken strips and half of the fajita seasoning. Mix well and set aside for 5 minutes
Step 2. In a large pan, add a drizzle of olive oil over medium high heat. Add garlic and cook for 1 minute or until fragrant. Add chicken and cook for 10-15 minutes or until the chicken is cooked through. Set aside
Step 3. In the same pan, add another drizzle of olive oil and the shallots, capsicum strips and the rest of the fajita seasoning. Stir fry for 4-8 minutes on high heat depending on how tender you prefer your vegetables
Step 4. Add couscous, plus two cups water (follow recommended amount of water on couscous packaging) and 1/4 teaspoon salt to a small saucepan and bring it to the boil. Simmer and cook for 6 minutes until the couscous is easily fluffed with a fork. Once the couscous is cooked, add lime juice to taste and mix through with coriander
Step 6. Assemble and enjoy!
Notes: Optional toppings include guacamole or sliced avocado
