Healthier Chicken Sausage Rolls

These Healthier Chicken Sausage Rolls are golden, flaky, and packed with flavour. Soft, juicy chicken mince is mixed with sweet carrot, tender zucchini, and aromatic onion and garlic, all seasoned perfectly and wrapped in buttery puff pastry. Topped with a glossy egg wash and a sprinkling of sesame seeds, they bake up crisp on the outside and melt-in-your-mouth on the inside. Perfect for lunchboxes, snacks, or sharing at a gathering, they’re a sneaky way to get the kids enjoying their veggies and everyone will keep coming back for more.

Makes: 29-30 sausage rolls
Prep time: 30 minutes
Cook time: 30-35 minutes
Ingredients
5 sheets puff pastry
1 kg chicken mince
1 large carrot, grated
1 medium zucchini, grated
½ large onion, finely diced
2 garlic cloves, crushed
2 tbsp Worcestershire sauce
2 tbsp tomato paste
1½ cups panko breadcrumbs
1 tsp salt
1 egg, beaten (for egg wash)
1/4 cup sesame seeds, for topping
Method
Step 1. Preheat the oven to 180°C and line two baking trays with baking paper.
Step 2. In a large bowl, combine the chicken mince, grated carrot, grated zucchini, diced onion, crushed garlic, Worcestershire sauce, tomato paste, panko breadcrumbs, and salt. Mix everything together until it is well combined.
Step 3. Lay out one sheet of puff pastry on a clean surface. Shape a portion of the filling into a long log along the length of the pastry. Roll the pastry around the filling and seal the edge with a little beaten water. Repeat this process with the remaining pastry sheets and filling.
Step 4. Place the rolls seam-side down on the prepared trays. Generously brush the tops with the beaten egg and sprinkle with sesame seeds.
Step 5. Bake the sausage rolls in the preheated oven for 30–35 minutes, or until golden brown and cooked through. Allow them to cool slightly before slicing and serving.
