White Christmas Coconut Bliss Balls


Ready In: 20 minutes

Makes: 12-20 depending on size of your ball


Ingredients

  • 3 cups unsweetened desiccated coconut

  • 1 cups almond flour

  • 1/3 cup rice malt syrup

  • 4 tbsp water (+ 2 extra if mix is too dry)

  • 2 teaspoon vanilla essense

  • 3 tbs additional desiccated coconut for topping or dark chocolate for melting


Method


Step 1. Add all ingredients to the food processor. Start off by adding 2 tbsp of water and see how it goes


Step 2. Process until it forms a crumbly dough easy to bring together in your hands to shape balls. If the mixture is too dry, add the extra 2 tablespoon of water and process again 


Step 3. Scoop out some ball dough in your hands. Roll and press to form a ball


Step 4. On separate plates, spread out additional desiccated coconut. Roll each ball in topping before placing in a storage container and popping in the fridge


Notes:

  • You can also decorate the bliss balls by drizzling melted chocolate on the top. I use sugar free dark chocolate because the darker the chocolate the healthier.

  • Store in the fridge in an airtight container for up to 1 week
