This is one of my Middle Eastern recipes growing up. Every Saturday morning after mum and I would take Nadia to speech pathology we’d come home and and she’d made us fresh manoosh! THE BEST. Simple. Flavourful. Wholesome and nothing beats homemade.

INGREDIENTS
1 cup self raising flour
1 cup greek yoghurt
Olive Oil
5 tbsp Zaataar
METHOD
Step 1. Preheat oven to 180C and line baking tray. Mix 6 tbsp of olive oil and zaatar mixture together in a small bowl and set aside.
Step 2. Combine the flour and yoghurt until it forms a dough. If the dough is too dry add 2 tbsp yoghurt and if it’s too sticky add 1 tbsp extra flour. If that still doesn’t work add 2 tbsp of olive oil and knead through, that should remove any stickiness.
Step 3. Cut dough into 4 equal pieces and on a lightly floured work surface using lightly floured hands or rolling pin, gently flatten each piece of dough into a disc.
Step 4. Soon 1-2 tbsp of the zaatar mixture on each base and spread evenly. Place each disc on lined baking tray and bake for 20-25 mins or until golden brown.
Serve warm with fresh tomatoes and cucumber or melted haloumi cheese.
