A delicious way to use up any veggies you have in the fridge and make yourself a quick and nutritious meal! Let me know if you try it and what veggie combo you use xx

Makes: 1 Frittata
Serves: 2
Ingredients
1 x extra large tortilla
Baby spinach
Capsicum, thinly sliced
Bottom Mushrooms, thinly sliced
Eggs, whisked
Danish Feta
Parmesan cheese
Mixed herbs
Salt and pepper
Air Fryer Method:
Step 1. Place extra large tortilla in the base of your air-fryer.
Step 2. Add the veggies and pour over the egg mixture.
Step 3. Sprinkle the feta and parmesan on top and season with herbs and salt and pepper.
Step 4. Cook at 160 °C for 15 mins and serve hot!
Oven Method:
The only difference is, you’d place the ingredients in an oven safe dish and bake at 180°C for 20 mins.
