Air-fryer Frittata

This air fryer frittata is a quick, nourishing meal that makes the most of simple ingredients and leftover vegetables. An extra large tortilla forms a crisp base while the eggs cook into a soft, fluffy filling, layered with fresh veggies and pockets of creamy feta and parmesan. It comes together in minutes with minimal prep, making it perfect for busy mornings, light lunches, or an easy dinner. Versatile and reliable, it can be adapted with whatever ingredients are on hand, delivering a satisfying, flavour-packed result every time!

Ready in: 20 mins
Makes: 1 Frittata
Serves: 2
Ingredients
1 x extra large tortilla
Baby spinach
Capsicum, thinly sliced
Bottom Mushrooms, thinly sliced
Eggs, whisked
Danish Feta
Parmesan cheese
Mixed herbs
Salt and pepper
Air Fryer Method:
Step 1. Place extra large tortilla in the base of your air-fryer.
Step 2. Add the veggies and pour over the egg mixture.
Step 3. Sprinkle the feta and parmesan on top and season with herbs and salt and pepper.
Step 4. Cook at 160 °C for 15 mins and serve hot!
Oven Method:
The only difference is, you’d place the ingredients in an oven safe dish and bake at 180°C for 20 mins.
