Apple & Oats Protein Muffins

Protein-packed, 100% healthy, naturally sweetened with rice malt syrup and super easy to make! They are the perfect grab-and-go, clean eating breakfast or snack!

Makes:12 muffins



Ingredients

  • 2 cups rolled oats

  • 1 cup vanilla protein powder

  • 4 large apples deseeded

  • 2 eggs

  • 1 cup milk of choice

  • 1 1/2 tbsp ground cinnamon

  • 2 tbsp rice malt syrup

  • 1tbs apple sauce

  • 1 tsp baking powder


Method


Step 1. Preheat oven to 180° and lightly coat muffin tray with coconut oil or extra virgin olive oil


Step 2. Turn 1 cup rolled oats into a fine flour using a food processor (about 1 minute)


Step 3. Process the seeded apples, skin on, in a food processor for about 10-15 seconds. They should have the same texture as if they were shredded



Step 4. In a large mixing bowl, mix all of the ingredients until completely combined


Step 5. Divide the batter among 12 muffin tins, filling them all the way to the top


Step 6. Bake for 18 to 20 minutes or until golden brown
