Made this banana bread for one of my snacks this week. It’s wholesome, delicious, and healthy - made with just a few simple ingredients that most of you will hopefully already have at home
Ready In: 70 mins
Makes: 1 loaf
Ingredients
3 cups rolled oats
3 large bananas
¼ cup milk of choice
⅓ cup maple syrup
1 tsp vanilla essence
2 eggs
2 tsp cinnamon
Pinch of salt
¾ tsp baking soda
1 tsp baking powder
1 extra banana for decorating (optional)
Method
Step 1.Preheat oven to 180C and line a loaf pan. Using a food processor grind 3 cups of rolled oats into fine oat flour
Step 2. In a large bowl, add mashed bananas, maple syrup, eggs, vanilla, milk and mix well
Step 3. In a separate bowl add cinnamon, salt, baking soda, and baking powder to oat flour and mix well. Add the wet ingredients to the dry ingredients and mix until totally combined
Step 4. Pour the mixture into your loaf pan. If using extra banana, slice down the middle and place on top of the mixture
Step 5. Bake oven for 45-50 mins or until you can insert a toothpick and it comes out clean. Allow to completely cool before slicing and enjoying!
