Choc Chip Cookies

Is there anything better than a fresh batch of choc chip cookies? I think not! Introducing my speedy and simple choc chip cookie recipe – which my colleagues would agree are the perfect texture and taste! It’s time to get baking



Ready In: 30 mins Makes: 12-15 cookies


Ingredients

  • 2 cups almond meal

  • 1/4 cup baking dark choc chips

  • 1/4 cup rice malt syrup

  • Pinch of salt

  • 1/4 tsp baking soda

  • 1/2 tsp vanilla essence

  • 4 tbsp coconut oil, melted

  • 2-3 tbsp milk of choice, as needed (I used almond)


Method

Step 1. Preheat oven to 180C. Add all the ingredients to a large bowl and mix well

Step 2. Form the batter into small balls and arrange on a lined baking tray. Flatten the balls out gently with your fingers to form neat circles


Step 3. Bake for 17-19 minutes or until golden brown and let cool for 10-15 mins before devouring ⭐️Notes: Swap rice malt syrup for any other sticky sweetener of choice. Milk can be substituted for water. Lightly grease your baking tray If you don’t want to use baking paper.
