Ready in: 30 minutes
Makes: 12 muffins (1 serve = 2 - 3 muffins)
Ingredients
1 cup rolled oats
1/2 cup milk of choice
3 ripe bananas
2 eggs
2 tbsp maple syrup (or rice malt syrup)
2 tbsp chocolate protein powder
1 1/2 tbsp cacao
1 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
Baking dark chocolate chips
Method
Step 1. Preheat oven to 180° and lightly coat muffin tray with coconut oil or extra virgin olive oil
Step 2. Add all ingredients to a blender or food processor and blend until smooth
Step 3. Transfer to the muffin tin, evenly distributing across 12 tins. Place roughly 6 -8 dark baking chocolate chips on top, spreading them out evenly. Do not push chocolate chips down into the batter
Step 4. Bake for 15 -17 minutes or until a toothpick comes out clean. Let muffins cool on a rack before eating!
