Cranberry, Cinnamon & Pecan Oat Squares

These cranberry, cinnamon and pecan oat squares will make a fab Christmas breakfast or healthy festive snack. They taste absolutely amazing and only take 30 minutes to make!


Ready in: 30 minutes

Makes: 9-18 squares depending on size



Ingredients

  • 3 cups rolled oats

  • 3 teaspoons cinnamon

  • 1 cup milk of choice

  • 1 cup dried cranberries

  • 3/4 cup of crushed pecan nuts

  • 1 cup maple syrup or honey

  • Extra virgin olive oil for greasing


Method


Step 1. Preheat oven to 180°C


Step 2. Grease 20cm x 20cm square tin with oil and line with baking paper. Grease the baking paper too


Step 3. Place the oats and cinnamon in a bowl and mix well. Then add the the milk and mix together until combined.The mixture will be quite stiff as the oats quickly absorb the milk


Step 4. Add the cranberries, pecans and maple syrup and mix thoroughly


Step 5. Pour the mixture into the prepared tin and flatten


Step 6. Bake for 20-25 minutes until golden on top and quite firm if you press the middle down.


Step 7. Allow it to cool for 5 minutes and then remove them from the tin (use the baking paper to help you) and place on a chopping board. Cut into squares.These squares can be eaten warm or cold. Once cold, store in an airtight container.
