Easy Slow Cooker Mexican Chicken

Juicy, full of flavour, and ideal for taco night - this recipe makes enough for 10 tacos and takes just 15 minutes to prep!

Makes: filling for 10 large tacos
Ready in: 15 mins prep
Cooking time: 3-6hrs
Ingredients
drizzle of olive oil
600-700g chicken breast
1¼ cup of your fave Mexican salsa• 1 packet taco seasoning
2 tsp salt
Taco Fillings:
10 tortillas
1 x 400g can mixed beans
1 400g can corn
4 tomatoes, diced
1/2 lime or lemon juiced
Fresh coriander (small bunch)
Extra inspiration like: avocado, lettuce, sour cream, lime - whatever your household loves.


Method
Step 1. Add light drizzle of olive oil to slow cooker. Mix salsa + seasoning in the slow cooker. Add chicken. Season with salt.
Step 2. Cook on high for 3 hrs (or low for 6).
Step 3. Shred chicken with two forks
Step 4. Fill warm tortillas with chicken and all your fave toppings. I like to mix diced tomato, coriander, corn, beans and a bit of lemon juice!
Tip: Double batch it like I did, freeze the extras for a fuss-free meal another day!
