One Pan Lemon Garlic Chicken & Potatoes + Turmeric Garlic Rice

Meal Prep Sunday! 🍋 One Pan Lemon Garlic Chicken & Potatoes + 🌾 Turmeric Garlic Rice
The easiest gluten-free meal packed with flavour, colour, and minimal cleanup 🙌
Serves: 4
Ready in: 45 mins

Ingredients
Chicken & Potatoes
500–600g chicken thighs (or breasts)
1kg baby potatoes, halved or quartered
4 garlic cloves, crushed
Juice of 1 lemon 🍋
Olive oil
1 tsp dried oregano
1 tsp paprika
Salt & pepper to taste 🧂
Fresh parsley (to garnish) 🌿
Turmeric Garlic Rice
1 cup jasmine rice (rinsed)
2 cups water or low-salt chicken stock
2 garlic cloves, finely minced
1/2 tsp ground turmeric
olive oil
1/2 tsp salt
Method: Chicken & Potatoes
Step 1. Preheat oven to 220°C

Step 2. Place potatoes on a microwave-safe plate, cover with a damp towel, and microwave for 5 minutes
Step 3. On a lined baking tray, add chicken, semi-cooked potatoes, olive oil, garlic, lemon juice, oregano, paprika, salt & pepper
Step 4. Roast for 35–40 mins until chicken is golden & cooked through (internal temp 74°C) and potatoes are fork-tender
Step 5. Optional: Broil for 2–3 mins at the end for crispy skin
Step 6.Garnish with chopped parsley 🌿 and serve!
METHOD: Turmeric Garlic Rice
Step 1. Heat a drizzle of olive oil and sauté garlic for 30 seconds.
Step 2. Stir in turmeric and rice, cook for 1–2 mins.
Step 3. Add water (or broth) and salt. Bring to a boil.
Step 4. Cover, reduce heat, and simmer for 15 mins.
Step 5. Let sit covered for 5 mins, then fluff with a fork.
