Fro-Yo Bark

I never and I mean never get sick of eating frozen yoghurt and fruit. This is one of my favourite snacks as the weather warms up because it’s so delish! Bonus that it is high in protein, super quick and easy to make and the flavour combinations are endless. I’ve given you 6 different combinations to try below, but don’t be afraid to get creative and top this recipe with your favourite fruit and nut combos!


Ready in: 2hrs (including freeze time)

Makes: 16- 20 pieces


Base Recipe:

  • 2 cups plain yogurt (I used plain YoPRO)

  • 3-4 tablespoons natural maple syrup

  • 1 teaspoon vanilla essence, extract or paste

  • Your favourite toppings (see ideas below)


Method:

Step 1. Line a baking tray


Step 2. In a medium-sized bowl mix together yogurt, maple syrup, and vanilla until well combined


Step 3. Spread yogurt mixture evenly onto the prepared baking tray and scatter toppings


Step 4. Place in the freezer for about 1.5- 2 hours or until the yogurt is firm


Step 5. Cut or break into 16-20 pieces and enjoy


Flavour and Topping Ideas:

  • Mango, strawberries, kiwi, blueberries, and mandarin

  • Raspberries and pistachios

  • Shredded coconut, dark choc chips, and blueberries

  • 4 tbsp natural peanut butter (mix in with base), dark chocolate chips, desiccated coconut and banana slices to top

  • 1 tbsp matcha powder (mix in with base), pistachios, and pomegranate to top

  • 4 tbsp cacao powder (mix in with base), raspberries, crushed almonds to top



Notes:

  • Maple syrup can be substituted for honey for rice malt syrup

  • Taste test the base recipe to ensure it’s to your liking and adjust ingredients accordingly before topping

  • Store in a sealed freezer bag for up to 3 months

  • I let mine sit for 5 mins before eating
