Kofta Bi Siniya

Kofta Bi Siniya or Tray baked kofta is a comforting, flavour-packed Middle Eastern dish that brings together seasoned ground meat (kofta), slices of potato, and juicy tomatoes, all simmered together in tomato juice. This dish perfect for family dinners or special gatherings alike!

Serves: 4-5
Ingredients
Olive Oil
1kg Minced lamb or beef
1 Large onion, finely diced
1 small bunch, Continental parsley, finely chopped
1 tsp Arabic 7 spices
1 tsp Pimento Pepper
0.5 tsp Black Pepper
1 tsp salt
2 Large potatoes peeled and Sliced 0.5cm thick
2 large tomatoes, sliced
I cup tomato juice or 1 tbsp tomato paste dissolved in 1 cup water
Basil, garnish with (optional)
Method
Step 1. Preheat the oven to 220°C and line a medium-sized baking tray with parchment paper or lightly grease it
Step 2. In a large bowl, combine the minced beef, chopped onions, parsley, a drizzle of olive oil, and all the spices. Mix thoroughly until everything is well incorporated
Step 3. Press the meat mixture evenly into the base of the prepared baking tray, spreading it out so it reaches the edges and maintains a consistent thickness throughout. Using the back of a small spoon or your index finger, create 3 to 4 shallow grooves lengthwise across the tray. These indentations will help the meat cook more evenly
Step 4. Pierce the potato slices lightly with a fork to help them cook faster. Layer the potato slices evenly over the meat, followed by a layer of tomato slices
Step 5. Salt the tomato juice to taste, then pour it evenly over the tray bake
Step 6. Place the tray in the preheated oven and bake for approximately 60 minutes, or until the meat is cooked through and the potatoes are tender
Step 7. Garnish with fresh basil. Serve hot, with a side of Salad or Lebanese bread either on its own or over a bed of rice
Notes: instead of the tomato juice you could substitute with pomegranate molasses
