Lemon, Parmesan & Broccoli Penne Pasta

Simple, speedy, and full of flavour - yes please! This vegetarian dish will satisfy your entire family or meal prep and have everyone coming back for more.


Serves: 6

Ready In: 30mins


Ingredients:

  • Extra virgin olive oil

  • 500g penne pasta

  • 2 broccoli heads, cut into small florets

  • 2 ½ cups frozen peas

  • zest and juice of one lemon

  • 2 garlic cloves, minced

  • ½ cup freshly grated Parmesan cheese

  • 300g light cooking cream

  • Salt and pepper

  • 1 extra lemon, cut into wedges for serving (optional)



Method:


Step 1. Cook pasta according to package directions (save 1/2 cup of the water you cooked the pasta in to add to the sauce)


Step 2. In a large pan, add a splash of olive oil, minced garlic, lemon zest and cook for 1-2 minutes or until fragrant. Add the broccoli florets and a ¼ cup of water and cook for 3-4 mins or until the broccoli softens slightly


Step 3. Add the peas to the pan, stirring for 1-2 minutes until they start to soften then add the light cooking cream and ½ cup of water (if you can use the water from your pasta that would be best) and stir through for 3-4 minutes or until well combined


Step 4. Add the cooked and drained pasta, lemon juice, and parmesan cheese, stirring until the cheese has melted


Step 5. Season with salt and pepper and serve with an additional wedge of lemon and an extra sprinkle of parmesan.
