Makes: 12 patty pans
Ready In: 30mins
Ingredients:
2 1/2 cups popped popcorn
1/2 cup sultanas
1/2 cup dried cranberries
1/2 cup pumpkin seeds
1 cup shredded coconut
1/2 cup coconut oil, melted
1/2 cup rice malt syrup
1/4 cup cacao powder
4 tbsp natural peanut butter
1 tsp vanilla essence
Method:
Step 1. Combine all ingredients in a medium bowl and stir gently until the popcorn is well-coated
Step 2. Scoop the mixture into 12 patty pans/silicone muffin liners or muffin tins
Step 3. Place in the fridge to set
Step 4. Try not to eat all at once
Notes:
I like to use cobs popcorn sea salt ready-made popcorn. If you want to make your own popcorn add a pinch of salt to the mixture.
Store in an airtight container in the fridge for up to a week.
