Lola-Road Crackles

Introducing LOLA-ROAD CRACKLES, in all its no-bake glory! It is ridiculously easy to whip up and packed with loads of nutrient-dense ingredients. Treat yourself, friends, and family to a batch today and let me know how you like them!



Makes: 12 patty pans

Ready In: 30mins


Ingredients:

  • 2 1/2 cups popped popcorn

  • 1/2 cup sultanas

  • 1/2 cup dried cranberries

  • 1/2 cup pumpkin seeds

  • 1 cup shredded coconut

  • 1/2 cup coconut oil, melted

  • 1/2 cup rice malt syrup

  • 1/4 cup cacao powder

  • 4 tbsp natural peanut butter

  • 1 tsp vanilla essence



Method:

Step 1. Combine all ingredients in a medium bowl and stir gently until the popcorn is well-coated


Step 2. Scoop the mixture into 12 patty pans/silicone muffin liners or muffin tins


Step 3. Place in the fridge to set


Step 4. Try not to eat all at once


Notes:

  • I like to use cobs popcorn sea salt ready-made popcorn. If you want to make your own popcorn add a pinch of salt to the mixture.

  • Store in an airtight container in the fridge for up to a week.
