Banana Bread Breakfast Cookies

These cookies are a classic flavour combination that you’ll want to make over and over again!


Makes: 12 cookies

Ready in: 20 mins


Ingredients

  • 1/2 cup oats

  • 1/3 cup coconut flour

  • 1/2 tsp baking soda

  • 2 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup flax seed ground

  • 1/2 cup walnuts, finely chopped

  • 1 cup ripe, mashed banana (roughly 2 large bananas)

  • 1 large egg

  • 1/2 tsp vanilla essence

  • 1/3 cup dark chocolate baking chips



Method


Step 1. Preheat oven to 190°and line tray with baking paper


Step 2. In large mixing bowl, combine all dry ingredients and stir until combined


Step 3. Add wet ingredients and mix thoroughly


Step 4. Add chocolate chips to the batter and stir through gently


Step 5. Scoop cookie dough onto baking tray, creating 12 cookies. Press each cookie down into a cookie shape 


Step 6. Bake for 9 -12 mins, or until the edges are golden brown and the tops are set


Step 7. Let cool for 10 mins and enjoy x
