Choc Protein Pancakes

OK, so I’ve experimented with a few different ways to make these and I’ve decided that this combination is not only the easiest but actually tastes the best. I’ve prepped mine for breakfast, but I’d even have them as a snack and they taste great cold if you don’t have access to a microwave!


Ready in: 20mins

Makes: 10 pancakes



Ingredients:

  • 2 large eggs

  • 1/4 cup milk of choice

  • 2 tbsp rice malt syrup

  • 1/2 cup unsweetened applesauce

  • 1 1/2 cups oats

  • 2 tbsp chocolate protein powder (I use lean @tropeaka choc protein)

  • 1tbsp cacao powder

  • 2 tsp baking powder

  • Pinch of salt

  • 1/2 tsp vanilla extract

  • Olive oil cooking spray


Method:


Step 1. In a blender or food processor, place wet ingredients (eggs, milk, syrup, applesauce) and blend


Step 2. Add the oats, protein powder, cacao powder, baking powder, salt and vanilla, and blend or process until as smooth as possible. Allow batter to sit for 3 - 5 minutes to thicken


Step 3. Heat nonstick pan over medium heat. Spray pan lightly with olive oil and pour 1/4 cup of the batter. When the pancakes start to bubble flip over and repeat with the rest of the batter.


Step 4. Top with fresh fruit, syrup or dark chocolate chips and enjoy!
