Easy Apple Pie Cookies

Apple pie cookies coming right up! They’re soft, chewy, and easy to make. I really enjoyed these and I hope you do too. Please let me know how you go if you try them x

Ready in: 60mins Makes: 12-15 cookies Ingredients

  • 1 cup quick oats

  • ¾ cup plain wholemeal flour

  • 1 ½ tsp baking powder

  • 1 ½ tsp ground cinnamon

  • Pinch of salt

  • 2 tbsp coconut oil, melted

  • 1 egg

  • 1 tsp vanilla essence

  • ½ cup rice malt syrup

  • 1 red apple, finely diced


Method Step 1. Preheat the oven to 180C and line a baking tray

Step 2. In a medium bowl add together the quick oats, flour, baking powder, cinnamon, and salt

Step 3. In a separate medium bowl, mix together the coconut oil, egg, vanilla, and rice malt syrup. Add in the flour mixture, stirring just until incorporated. Fold in the apple. Chill for 30 minutes

Step 4. Distribute the cookie dough into 12-15 rounded scoops onto the prepared tray, and flatten into cookie shapes

Step 5. Bake for 13-15 minutes or until just golden. Allow cooling completely before enjoying

Notes: Wholemeal flour can be replaced with plain white flour. Rice Malt syrup can be substituted with honey or any other sticky sweetener of choice.
