Frugal 5 Lemon, Garlic, & Cherry Tomato Salmon Bake
Simple, flavourful, quick and easy. Perfect for those nights you don"t have a lot of time to make dinner, but still want a nutritious homemade meal
Ready in: 25
extra virgin olive oil
2 skinless salmon fillets
1 lemon - ½ juiced, ½ cut into rounds
2 large cloves garlic, crushed
16 cherry tomatoes, halved
Step 1. Preheat oven to 180C. Place salmon fillets on a lined baking tray, surround with cherry tomatoes and lemon rounds
Step 2. Season with salt, add lemon juice, and drizzle with olive oil.
Step 3. Add crushed garlic, mixing everything together to ensure the tomatoes and fillets are well coated
Step 4. Bake for 15mins or until cooked to your liking
Step 5. Serve on a bed of rice and garnish with fresh thyme (optional)
Storage: store in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months cooked and 3 months uncooked.
